Adapted from Giada De Laurentiis recipe.
Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F.
In a large saucepan, heat the oil over medium-high heat. Add the sausages and cook, stirring occasionally, until brown. Take out and set aside.
In the same saucepan, melt the butter over medium heat; add, shallots, carrots and thyme to the saucepan. Season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Cook until the carrots are tender, 6 to 8 minutes. Stir in the flour and cook for 1 minute. Increase the heat to high and add the vegetable broth. Cook until the mixture thickens, about 3 minutes. Add the sausages, heavy cream, peas, corn, and the remaining salt and pepper. Simmer for 3 minutes until heated through. Place in lightly greased baking dish.
Place pre-made pie crust on top of baking dish and poke holes in top of crust to ventilate. Bake until the crust is golden and the filling is bubbling, 20 to 25 minutes. Cool for 5 minutes before serving.
