A healthy and tasty alternative to some of the 'standards'. Recipe makes about 12 servings, and we calculated 2000 calories for the entire batch. This works out to a bit more than 4 WW points per serving!
Pour Vegetable broth into your slow cooker, then add chicken breasts, fresh ingredients, and seasonings
Set temperature to 'High' and cook 3 hours
Use a wooden kitchen tool and break up the chicken
Add the canned ingredients and stir thoroughly
Cook on High an additional three hours, stirring occasionally
Taste-test and add salt if desired
Reduce temp to 'Low' and simmer until mealtime (at least another hour)
Spoon into serving bowls and top with a pinch of your favorite cheese
Serve with warmed tortillas or Naan with butter, and enjoy!
