Suggest a better descriptionCook ziti according to package directions; drain; set aside. Preheat oven to 350F. Saute chopped onion in olive oil til golden brown. Place in bowl; combine with ricotta cheese. Mix in beaten egg. Scrub zucchini well, shred finely (1 cup), add to onion and cheese mixture, along iwth parsley and pepper. Mix well. Stir in ziti. Pour into 1 1/2 quart casserole dish. Sprinkle iwht parmesan cheese; dot with butter. Bake for 30 mintues. For extra crustiness, place under broiler for about 4 minutes or until golden brown.
For chicken version add 1 cup diced cooked chicken to oinon and cheese mixture in addition to zucchini. Increase ricotta cheese to 1 1/2 cup.
