Made with low fat cottage cheese this is a low fat low cholesterol recipe enjoy
fry zucchini and onion in oil till golden
mix herbs with cottage cheese
put a layer of zucchini in bottom of oven proof dish then a layer of tomatoes and then some of the cheese mix continue to build this up till these have been used up finnish with a layer of tomatoes and top with the parmazan.
Cover with lid or foil and bake in a pre heated oven 350f (180c) for 25-30 mins remove cover for last 10 mins.
I made this as stated to serve six but found as a meal in its own right it only served four.You can leave the skin on the zucchini if you like.
