Suggest a better descriptionPlace grated zucchini in a sieve or colander, salt lightly and toss to mix. Let stand for 30 minutes to draw out excess moisture. Squeeze zucchini dry with kitchen towels and transfer to a bowl. Add crumbled cheese, green onion, dill, mint, parsley, egg, flour, salt and pepper to taste and stir until well mixed.
Heat oil to a depth of 1/4 inch in a deep frying pan over medium-high heat. Drop spoonfuls of batter into the hot oil, being careful not to crowd the pan. Cook, turning once, for 2-3 minutes on each side, or until nicely browned on both sides.
Using a slotted spoon or spatula, transfer fritters to paper towels to drain. Keep warm until all fritters are cooked.
Arrange fritters on a warmed platter and serve hot.
