I am a happly married mom of 2 a 10 year old Boy and a 4 month old baby girl. I work full time as a Executive Adminastrative Assistant to a neurologist here in Jacksonville, FL.
I enjoy eating Italian the most.

Peanut Butter CakeThe whole family loved this one! I made this for my husband's b-day, he thought it was great. I will make this one again.

Stuffed Chicken BreastsGreat Meal. I did the cream cheese with Parmesan and then cooked Stove Top stuffing and added that. It was great.

Healthy & Light Sour Cream ChickenThis meal was great. I only cooked 2 chicken breast this time though and it was not enough. I will cook 3 or 4 next time.

Salsa ChickenVery good. Next time though I think I will try to cook the chicken on the stove top then add the salsa.

Twice Baked PotatoesI cooked them in the microwave first then put in the oven just long enough to melt the cheese on top. I also buttered and salted the out side because my husband likes to eat the jacket as well. Very good! Will cook again.
