Spicy Vegetable Soup with Black Beans
We have been vegetarian over a year & love experimenting. I do however, miss some of my old meals I used to make. Meatloaf, roast, ribs, redwine chicken....but, so far we have done very well getting our bellies full and satified.

Spaghetti Bolognese with ChorizoMy husband made this tonight with soyrizo, since we are vegetarians. Added mushrooms instead of beef and one zucchini. The kids and I are waiting and drooling standing over the pot....it is terrific

Chicken PiccataA bit on the lemony side for any of us here. I really enjoyed it though, we used fake chicken from Quorn. I will make a gain, just alter the lemon a bit.

Sweet and Spicy Barbecue SauceI made slightly less sweeter than called for, but my teenage daughter and husband talked about how good this was for days after. I am a bit sketchy when people say they made bbq sauce...but this was YUM

Peanut Butter CookiesReally...I made a double batch and the family did enjoy snacking on these for days. I thought they were a bit high maintence with the chilling of the dough and the pans.

Spicy Chicken Tortilla SoupI wasn't expecting the kids to eat it, there they were even eating it by the spoonsfuls from the pot. We had out of town guests to who were not staying for dinner, but when they got a glimpse and smell of this soup they both had to enjoy a bowl. YUM

Artichoke My ChickenMy husband keeps asking me about a meal he loved & when was I going to make it again. It was this. He loves food, but rarely is he so insistant about "when can we have that again?"

Better Than Olive Garden Alfredo SauceI'm fairly picky about alfredo sauce. This one is rich and delish.

Cajun "chicken" AlfredoI am thrilled thhat there is a recipe using veggie chicken and this type of chkn is sooooo good to. if I didn't already adapt a recipe for tonights veggie meal I would use this, however soon, very soon, this one will be made. YUM!

Grilled AsparagusMy kids think asparagus tastes like pee. I was surprised when I looked at their plates and they had some on them to begin with & then doubley surprised when they plates where empty. Good stuff.

Grilled Portabella MushroomsI love good vinegar. I was a bit skeptical because I don't like rawish onions (shallots) but I used red onions and these were YUM!!! Very happy with this; I served them with creamy lemon spagetti.

Creamy Lemon Spaghetti with Olives and BasilMy husband & I thought this was a great summer dish. Refreshing and light. I used the tomamtoes and olives. We discussed how we would make this again for our fancy guests....if we ever get some. :) Ultra quick...I served with grilled portabella mushrooms.

'Perfectly Chocolate' Chocolate Cake and FrostingIt was easy to make. I let it cool for a bit longer than it said & it feel apart. The cake was good and very moist the icing, well not very chocolate tasting but very sweet. I think choc cake is not something I can make well.

Lemon Sour Cream PieVery simple to make. The strawberries are great addition with the tart lemon filling. The family ate it up.

Teresas Spanish RiceI used green bell peppers and white rice due to having them on hand. If using white rice shorten the cooking time. I also added a small can of tomatoe sauce for color and a richer flavor. My 8 yr old loved it, as I thought it was pretty darn good too.

Soft and Chewy Chocolate Chip CookiesVery good, all the kids and husband were wanting the dough and then munching on the cookies. Recipe was great, I added some walnuts, but nothing else different, although a sub of some oatmeal may be worth trying too. Kinda nice to have such a detailed recipe, when sometimes details do matter.

Lemon Jello CakeSimple & quick to make, the glaze was good, i would recommend fresh lemon juice. Good for spring.

Peppered Tuna Loin, Potato Gallette, Greens And Ponzu SauceI LOVED this tuna recipe. I cooked it for about 2 min longer on each side, so a total of 6 min on each side, I like mine med. rare. However the 4 min is perfect for a standard tuna loin doneness.
