I am a retired Los Angeles City Fireman (Yes, I know today it is politically correct to say firefighter.  I have never been PC and in 1959 when I joined the department we were known as Firemen.) I spend 28 years on the job and most of the time as the station cook. Fireman will eat almost anything they can chew, or so I found out. It was fun expermenting over the years. I am now living in a small town "Deep in the heart of Texas" and loving it. Most of what I know about cooking was learned from my mother. She was a first generation Italian born in Alabama and did magic in the kitchen. Some of the recipes I have enjoyed will be posted on the BigOven site. I hope you may find them to your liking.

Tex-mex Chicken Spaghetti Casserole

Tex-mex Chicken Spaghetti Casserole

Unlike "maryfehr" below, I was not in awe, overcome and speechless after trying it. I would reserve "wesome" for something like giving birth, overcoming a major handcap, viewing a spactular event or something truely remarkable. I have never had a meal that fell into that catagory. This dish was very good and I will make it again.

Macaroni and Cheese like my Mother used to make

The answer to the question below is - USDA [not me] says under 30 carbs is low. There are 8 carbs from sugar and a total of 29 per serving. If this is too high I apologe for the statement.

Cyrano,
I apologize for the large postings. I didn't understand much about this program. I am replacing another recipe minder program I was using before, which allowed me to carry all my recipes in one place, and download them into my PDA. In changing programs, however, I needed to get all my favorite recipes into this new program quickly so that I could get them all on my PDA in the new format. The only way I could get those recipes into my PDA was to post them on the internet first, then into my Palm. That is all I was trying to do. I wasn't trying to supercede anyone else. I wouldn't even have posted them on the internet at all if it would get into my Palm without it. I have finished the job, and there will be very few new entries from me. Hope I haven't breached the etiquette too severely, and if so, I apologize.
