Chicken Enchiladas with a twistHad enough leftover for another meal. Increased the amount of cheese on top (Mexican four-cheese), splashed some Tabasco sauce on each bite, and added a side of whole, fresh jalapeno pepper. This made it for me! Moved up from a three to a four.

Chicken Enchiladas with a twistFirst Mexican recipe I've ever prepared. And it was pretty good. For my taste, next time will add some heat via hot salsa and sauce. Expect then to have a 4 or 5 rating.

Redeye Pineapple PancakesHad some pineapple rings left over from dinner, and thought would be nice to use them to fix Rose something cute for breakfast. Put this together in fun, and both of us found it very tasty.
