I absolutely loved this. I did cheat a little by using two different cheeses but It worked out still. I just didn’t have several types of cheese on hand. Instead of boiling I used a small pressure cooker to soften the potatoes. (I don’t think this would make much of a difference on taste just a little faster.) I also used the adobo recipe and it was a great blend of spices.
The reason I love this site is when I find a great recipes like this!
