Chicken EnchiladasThanks for this quick and easy recipe! For filling I used (1 medium) rotisserie chicken (shredded), 1 can fat free Cream of Chicken soup, and shredded mozzarella cheese. Skipped the beans and sour cream. Used 28 oz. red enchilada sauce. Topped with green onions after baking. Beautiful and delicious!

Oven Roasted VegetablesThis is one of my favorite ways to cook vegetables, especially in the colder months. I used carrot, red onion, potato, turnip and added 15-20 minutes for crispier edges.

Chicken Noodle SoupEasy recipe. Prefer more broth, so will likely use 1/2 chicken and 1/2 noodles next time. I made this in the afternoon and kept in warm in the crock pot until dinner time, adding noodles 30 minutes before serving.

Acorn Squash RavioliI used one wrapper per ravioli, so mine were triangle shaped. I liked the flavor of the filling, but the texture/flavor of the wrapper was not as satisfying as true pasta. I froze a dozen for later, and these cooked up beautifully.
