Taco SaladThis is my favorite taco salad! I love it!! I always season my ground beef with a packet of taco spice, and add olives....yum!

Easy Taco SoupMade this today, added 1 extra taco season packet, and one can of green chilies. We topped with corn chips, sour cream, and green onions on top. Family really liked it. Will be making again!

White Chicken EnchiladasThis is really good, especially the sauce. I doubled the chicken and added cumin and chopped green chilies to the filling mixture. I froze half of the rolled enchiladas( without the sauce on top) then thawed in the fridge and made sauce.

Mexican Stuffed ShellsMy family really enjoyed this, it freezes well, so I make a double batch and pop in freezer, then thaw in the fridge the night before I plan on making it. Yum!

House of Chaos Spaghetti PieI made this last night for dinner. I only used half the box of spinach and 1 cup of cheddar cheese on top, as that is what I had on hand. It was really good and my 9 year old daughter loved it. Will be making again. Thank you for a great recipe.

Mountain Dew Apple DumplingsI took this over to my inlaws. I had assembled these before and made the sauce and kept separate. I used half white sugar half brown sugar. Added a a tablespoon of vanilla. These were so easy to make, and so delicious!!!

Cajun Chicken PastaThis was tasty! I doubled the recipe, and it made a huge skillet full.added extra green onions and extra parmesan cheese into the sauce. Great left overs the next day. I will add this to our meal rotation, great recipe thanks!

Buffalo Chicken Macaroni Salad **Made this a few hours ago as a side dish. I left out the chicken and added green onion and a diced red pepper. Also added a lot more hot sauce( used franks wing sauce) My family loves anything with buffalo wing sauce so this was a hit!

Italian Sausage Skillet SlopI made this last night with a few changes. I used 1 pound of sausage mixed with 1/2 pound ground beef. I only used about a tablespoon of oil. Added fresh basil and used extra parm. Very well liked by my entire family. Made a lot!
