ManicottiAs far as recipes go, this was very easy to prepare. The taste however seemed a little bland to me and the meat filling seemed dry. If I make this again, I will add some cottage or ricotta to the meat filling, maybe make my own sauce instead of the packets and cook on a lower setting. The bottoms of the manicotti cooked a little too fast and were tough and slightly burnt.

Original King Ranch ChickenI did as another reviewer suggested and added a can of green chilis and some sour cream to the mixture which I think helped a lot. I thought this meal had good flavor, but no one else in my family liked and didnt even finish their plates... probably wont make this again, since this is a lot of food for just one person.

Lemon Garlic Chicken ThighsThis recipe was pretty good and easy, though it didn't blow me away with flavor. My husband suggested shredding the left overs, put in on a hoagie roll, top with mozz. cheese and toast it... so I may try to do that with the left overs.

Thyme Chicken and Rice Skillet DinnerFor me, the chicken was a bit dry and lacked the flavor I hoped it would have. The rice however was wonderful. I added celery, green and red peppers and some seasoned salt. If I make this dish again, I will probably use dark meat like chicken thighs or maybe even pork chops.

Applesauce Banana BreadDelicious! I some how forgot that I do not have a loaf pan, so I made mine into muffins. They turned out great. I let my 8 year old help me cook and test taste them. Needless to say they are adult and kid approved!!
