Ambie's Shrimp & Artichoke Alfredo

Ambie's Shrimp & Artichoke Alfredo

I changed a lot because I really wanted to make artchokes but I was missing other items....turned out great as a vegetarian dish with asparagus, mushrooms, garlic, parm and milk over tortellini. Even with no cream, it was delicious! Can't wait to make it correctly one day.

French Toast

French Toast

This is my favorite french toast recipe ....minus nutmeg with a little extra brown sugar. Made both regular-sliced white bread and raisin bread. Enjoyed by everyone.

Ziti Baked with Ricotta Cheese

Ziti Baked with Ricotta Cheese

I used shredded cheese and added more of all chesses + sauce so I had to cook 15 minutes longer to heat through. (Or was it because I cooled the pasta too much when rinsing????) Whole family enjoyed it. Next time, I might cover with aluminum foil before adding top layer of cheese and then brown for the last 5-10. Nice and filling vegetarian recipe. Thanks!

Sauteed Spinach

Sauteed Spinach

Added a few small sweet bell peppers and a shallot. Spinach is always yummy to me. My daughter didn't like it though...she said it tasted bitter.

Bam's Pinto and Refried Beans

Bam's Pinto and Refried Beans

I really enjoyed the beans refried (a few days later) for some vegetarian tacos with fresh guacamole. My first attempt with dried beans... I'm sure it was healthier than canned but I'm not certain it was worth the effort. A slow cooker recipe would make this even better.

Creamy Italian Orzo

Creamy Italian Orzo

Tasty...but a little bit trickier to make than I expected. I thought I needed the orzo cooked before I started the veggies. I failed to see that they had to cook 8 min after adding tomatoes. Next time, I'll start both the pot and the pan at the same time. I also had to google how to toast the pine nuts. Great as a vegetarian main dish. I made extra pine nuts for a little more protein. Hope to try with different veggies and cheeses next time.

Baked Parmesan Fish

Baked Parmesan Fish

It was good. Not enough coating for my fish, though. I had to make another batch of the parm/flour mixture to coat all 4 pieces.

Chinese Egg Drop Soup

Chinese Egg Drop Soup

Wonderful. My kids wanted it twice this week ready. My daughter said it wasn't as thick as the one in the restaurant, so I may add flour next time. Always love a quick recipe with only a few ingredients.

Bud's Cinnamon French Toast

Bud's Cinnamon French Toast

Not bad....but missing something. Maybe brown sugar and less eggs would be better for my taster???? I did try a 2nd batch with the vanilla as suggested...no change really. I also soaked a piece longer as somebody else suggested but that was a messy disappointment.

Very good. The easiest cooked dish I ever made.

Grape Salad

Grape Salad

Oh my gosh....it made a lot! Very expensive and fattening, too. My husband loved it, but I doubt I'll make it again.

Chicken Pot Pie

Chicken Pot Pie

I used red potatoes in place of chicken because of veggie son. Turned out great!

Taco Seasoning Mix

Taco Seasoning Mix

Yes...it was good. I layered it like colored sand in a spice bottle and gave it as a gift with blue nachos and a few other items in the kitchen theme.

Strawberry Pretzel Salad

Strawberry Pretzel Salad

It was just weird...with the cream cheese and pretzels. I had extra jello with strawberries and my family had no problem eating that. Next time I'll save the trouble of making the 1st and 2nd layers and just serve the top with cottage cheese.

Garlic Cheese Bread

Garlic Cheese Bread

I never had luck with garlic bread that wasn't "store bought". This recipe will be good to keep on hand. I used it on regular white bread and it was fine. I'm sure it will be great on a bakery loaf.

Popeye's Biscuits

Popeye's Biscuits

Turned out flat....like cookies. I'm thinking i should've dropped them by spoonfuls onto the pan.

If you have kids that don't like spicy food then certainly leave the red pepper out.

Create A Quiche

Create A Quiche

Great....but too much filling. Should've used a deep dish pie crust. I prebaked crust 10 min. Spinach and artichoke with onions,, garlic and Cheddar. Full of protein for my vegetarian son. Yum!

Creamy Cheesy Cauliflower Soup

Creamy Cheesy Cauliflower Soup

It was easy. Always looking for protein-rich dishes for my vegetarian son. He loved it.

Thanks so much for the nice comments on my recipe for pinto and refried beans. Here's a recipe (link below) for pinto beans you can do in the crockpot and then go from there to make the refried beans. I hope you enjoy it and check out some of my other slow cooker and crockpot recipes.
