I live in the beautiful city of Seattle where the food is terrific and the views are spectacular. I enjoy cooking, especially for family and intimate dinner parties with friends. Baking is all about spending time with my kids and bringing joy to others. I make a number of desserts for auctions.

Vegan Spinach and Quinoa EnchiladasWe have adopted Meatless Mondays in our house and I am always on the hunt for recipes that will delight our usual meat-eaters. This is one of those recipes. While I made quite a few substitutions - I used whole wheat tortillas, packaged enchilada sauce and a pre-packaged grain mix (TastyBite Zany Multigrain) - the meal was in the spirit of the original recipe. The result was a super hearty, satisfying tray of good-for-you-but-you-can't-tell goodness.

Oven Salmon CakesI made a huge platter of fresh salmon for dinner over the holidays and with the leftovers, made this dish. The recipe worked perfectly and everyone (5 teens and an adult) gobbled it up. I should have made more. I submitted a photo showing how I served it on a bed of wild rice and steamed fresh green beans. I would absolutely make it again.

Taco LasagnaWhat an easy dinner! Using Big Oven's Leftover app, I found this recipe and gave it a spin. My daughters and husband loved it. Since I only had flour tortillas and fresh salsa on hand but it turned out just fine; cheesy, beefy, with just a little spice. My husband had 2 exra helpings. As a working Mom, finding good recipes like this is a treasure.

Spicy Chicken And Vegetable PastaNext time I make this recipe I will not use frozen broccoli and I discovered you truly must use the chili garlic sauce. My broccoli turned out less fresh and appealing. I'll try and make this again and stick to the recipe.

Classic Coconut Cake with White Mountain Coconut IcingImpressive looking? You bet. As easy to make as most suggested? Not really. While this is certainly the ultimate of coconut cakes, I spent quite a bit of time putting it together. It was probably because I had never made sugar syrup before, but I ended up having to make two batches of the boiled sugar because I apparently overcooked the first batch. The cakes layers were easy to make and the batter was quite rich and yummy (I know, raw eggs are not safe but I had to sneak a taste). The final result was an beautiful cake that I am proud to donate to a charity auction. Sadly, I won't have a chance to taste it, but I plan on making it for a dinner party where I can treat myself to a slice....or two. (I have a photo of the cake that I'd like to publish.)
