Fajita SeasoningReally good seasoning, not too spicy. I ground all the ingredients together with my mortar and pestle to bring out the flavors even more.

Easy Breakfast PotatoesThese were a little too salty for me, but my kids liked them. I left them in the oven for 40 minutes and they came out nice and crisp.

Great HamburgersThese burgers were definitely tasty, but they didn't hold together very well. At the suggestion of one of the other reviewers, I mixed the ingredients in the morning and then let the meat mixture sit in the refrigerator for several hours in the hopes it would give the patties more cohesion, but they fell apart pretty quickly after cooking. Nevertheless, my husband and I loved them, but my kids didn't like all the green onion bits.

20-Minute Chicken ParmesanFantastic! I substituted olive oil for butter and it tasted wonderful. Very easy and family loved it.

Turkey Tortilla SoupThis is a great recipe to use up Thanksgiving turkey leftovers. It could also be a quick weeknight meal. I omitted the green chilies and it was perfect for my kids. Husband loved it, too.

Blueberry Oatmeal PancakesPretty good pancakes and a nice change from the usual. I didn't think they were too runny- the oatmeal gives the batter some density. They were a little tough to flip in that the blueberries would roll off the top. Next time I think I'll mix the blueberries directly into the batter rather than placing them on top. Or else, I'll take care to keep the blueberries in the center of the pancake so they don't roll off the edge when flipped.

Carrots with Lemon and ParsleyI didn't have fresh parsley so I used dried parsley flakes instead. It still tasted good. The best part of this recipe was that it was super-easy and a good way to use up those bags of baby carrots in the fridge that don't get eaten.

Italian Chicken StewGood hearty stew. I used ground beef and ground turkey. Worked just fine.
