Great Hamburgers

Great Hamburgers

These burgers were definitely tasty, but they didn't hold together very well. At the suggestion of one of the other reviewers, I mixed the ingredients in the morning and then let the meat mixture sit in the refrigerator for several hours in the hopes it would give the patties more cohesion, but they fell apart pretty quickly after cooking. Nevertheless, my husband and I loved them, but my kids didn't like all the green onion bits.

Blueberry Oatmeal Pancakes

Pretty good pancakes and a nice change from the usual. I didn't think they were too runny- the oatmeal gives the batter some density. They were a little tough to flip in that the blueberries would roll off the top. Next time I think I'll mix the blueberries directly into the batter rather than placing them on top. Or else, I'll take care to keep the blueberries in the center of the pancake so they don't roll off the edge when flipped.

Carrots with Lemon and Parsley

I didn't have fresh parsley so I used dried parsley flakes instead. It still tasted good. The best part of this recipe was that it was super-easy and a good way to use up those bags of baby carrots in the fridge that don't get eaten.
