Cucumber Dill Sauce(Goes with Poached Salmon)

Cucumber Dill Sauce(Goes with Poached Salmon)

I like this sauce! Very easy and tasty with poached salmon. I did not have any yogurt on hand so I only used the sour cream with the Dijon mustard which had some white wine. Parsley finely chopped adds texture and colour.

Emeril Brined and Roasted Turkey

Emeril Brined and Roasted Turkey

Chicken I used this brining and breast down method for a 5 lb chicken with excellent results (cutting quantities in half). The chicken sat in brine for 4 hours. I did add a lemon quartered as well because I like lemon. I did not stuff the chicken with the suggested celery onion mix but simply stuffed it with the lemon and orange from the brine. The juices / drippings were boiled at the end to make the gravy- adding some low sodium chicken broth and flour - for a lovely delicate taste.

European Street Style Beer Cheese Soup

European Street Style Beer Cheese Soup

Pretty good. I too did not add the onion. I had some extra Tex Mex Cheez whiz in the frig and used it for part of the cheese. So I did not need extra spice. Would have preferred a smoother soup.

Honey Glazed Slow Cooker Chicken Thighs

Honey Glazed Slow Cooker Chicken Thighs

One Addition to my review- should have mentioned - I cut the amount of butter quite significantly- but still good taste. I like the idea of adding scallions/ green onions at the end - I think that would add nice colour

Martha Stewarts Yorkshire Pudding

Martha Stewarts Yorkshire Pudding

I reduced everything by a third because there was just the two of us, but it worked out pretty well. Cooked 20 minutes to rise and brown. No drippings were available because I was slow cooking roast. Used pre heated individual muffin tins with 1 Tsp veg oil in each

Greek Style Moussaka

Greek Style Moussaka

I have had moussaka in Greek restaurants but this was my first time making it. On the whole - it is pretty good as a first try, although might like more body (with potatoes?) I salted the eggplant slices to draw moisture as this is a usual procedure with eggplant. I cut the recipe quantities in half because wanted fewer servings, but found I needed to add more tomato paste and red wine for flavour. There is a small typo - "cool" not "cook". Because there are just the two of us, I cut the recipe in half. However

Pork Stew with Cornmeal Dumplings

Pork Stew with Cornmeal Dumplings

just tried the cornmeal dumplings- not the full recipe- technically speaking, they should have been good but I found them quite bland even when using aged cheddar

Arroz Con Pollo [Rice with Chicken]

Arroz Con Pollo [Rice with Chicken]

Really good-my husband commented on how delicious it was. Although I cut the recipe in half for two- I accidentally left the rub ingredients the same- so probably hotter chicken than intended. But the sour creme helped balance that out. Thanks for a good one. one note- Not clear what size can of tomatoes needed.

Beef Wellington (Individual)

Beef Wellington (Individual)

The general recipe is good and easy to follow, but I did find my tenderloin rather bland tasting. I used brandy instead of a Madeira or sherry. Make sure you chop mushrooms and shallots very fine- you want this to almost look like a pate. Some Welli

Spicy Tomato Soup with Black Beans, Potato and Squash

Spicy Tomato Soup with Black Beans, Potato and Squash

Very good all around. Did find mine ended up more like a stew or chili than a soup. Was a might mild for my taste so made several adjustments to seasonings to boost flavour.

Pierna De Puerco Asada (Roast Leg of Pork Creole)

Pierna De Puerco Asada (Roast Leg of Pork Creole)

I would try this again because the combination of flavours seems promising.First attempt of this recipe not that successful though -- in part because all ingredients are not listed at beginning. e.g. Sherry, lime etc. And not sure what purpose of various steps are. Is this intended to come out with a pull apart type of pork?
