What's for dinner?
I grew up in rural south-eastern Saskatchewan, but now live in downtown Vancouver, British Columbia - Quite a change!  Some of my favorite passtimes include cooking and baking, cross-stitching, swimming, and listening to music.  I have a Bachelor's Degree in Political Science and Native Studies from the University of Regina, and hope to head back to school in the next couple of years to pursue a degree in Library and Information Technology.

I've always been very much interested in baking and recently have become more interested in cooking as well.  I find it very relaxing and therapeutic to be working in the kitchen with some good music on in the background!  My food horizons are broadening all the time and I am trying to try more types of fish lately, as it is so good for you!  (Being from rural Saskatchewan, fresh fish was not exactly always an option!)  Some of my favorite cooking memories involve my brother Scott and I baking peanut butter cookies together for our Grampa each Christmas while we were in University.

I made this for supper last night and it was very tasty! I went with 'joyofcooking's suggestion and baked it rather than simmering in the pan on the stove. It turned out great and the leftovers were perfect for lunch today.
