Great recipe! This was a hit at a potluck I took it to. I substituted margarine for the butter since some folks couldn't handle dairy and I just cooked chicken with the onions and carrots at the start and used half the amount of uncooked rice with the stock.

Trimlestown Roast Sirloin

I made this and it took less time than stated to get the roast to my liking but that is going to depend a bit on how you like your meat. The gravy turned out awesome and was a big hit. I would suggest putting the wine/whiskey in at around the half hour to 45 min point instead of a full hour. I also threw some carrots and onion in the broth during cooking and those turned out nicely as a side after cooking in the wine.
