This marinade is delicious. I used 4 boneless pork chops, and they were tender from the long low cook setting. The meat would probably have been even better with bone-in pork chops, since the bones usually keep the meat nice and moist while it cooks.

Basil Pesto

This is my favorite way to use up the leftover basil in my garden at the end of the season! Pesto shouldn't be canned because the heat cooks the basil and gives it a bitter flavor, but it freezes nicely. To freeze a big batch, spoon it into the sections of an ice cube tray lined with plastic wrap, then pop the frozen cubes into a freezer bag. That way you don't have to defrost all your pesto when you need a single portion of sauce.
