This is my favorite way to use up the leftover basil in my garden at the end of the season! Pesto shouldn't be canned because the heat cooks the basil and gives it a bitter flavor, but it freezes nicely. To freeze a big batch, spoon it into the sections of an ice cube tray lined with plastic wrap, then pop the frozen cubes into a freezer bag.
