Parmesan Crusted ChickenConcerning the instruction to lay pieces toward you, this is a Bad Idea. Many people tend to drop a piece as they are placing things in hot oil, because of heat or popping oil hits their hands, and a piece flopping toward you can splash hot oil on you or the hand holding the pan handle... better to place side to side or away, you can still cover any crumbs, and it won't splash YOU if you drop it!
