I hope to begin culinary school soon in Memphis. I have to figure out a way to have it paid for, or at least some. I specialize in pastas, seafood, casseroles, and soups. I like to try to make my meals affordable so that you can cook better meals on a low budget. I have began a food blog on my Facebook. I loved this recipe! I was wanting a Clam Chowder that was very creamy and smooth and had a wonderful flavor. I was impressed by the reviews and though that it didn't use just a whole lot of ingredients from what I had seen in other clam chowders. This was very easy to do. I had a few trials and errors while making this. At first I forgot to cut the bacon into small pieces. I allowed them to finished and that left me with extra grease. I washed out the pot, and then repeated this step with the small pieces as directed and added extra bacon grease. I had also made the mistake and bought canned whole clams. (I live in Arkansas and even our Kroger that typical carries "fresh" seafood did not offer clams like I wanted. But I minced the clams myself and it turned out great. I actually liked it, because I could dice them to various sizes. If I changed anything it would be how small I diced some of the potatoes. While it did not negatively affect the taste or texture, just personal preference

It was okay, I'm looking for something that has more substance and not so chunky potato in cream bath. It takes good, but I doctored it up with seasonings too. But it was good, just not what I was looking for.

I'm surprised this got so many good reviews. It was very easy to make, but I thought it lacked flavor and didn't have the right texture for me. Add some nut meg, cinnamon, cloves, and then you're talking. But easy to make, just not very flavorful.
