Stuffed Zucchini Italiano

Stuffed Zucchini Italiano

Fantastic! I added chopped mushrooms and half an onion to the meat mixture and used Trader Joe's Arribiata sauce instead of the simple marinara. My husband and two year old son couldn't get enough of it! We fought over leftovers the next day (I won, since I'm 9 months pregnant).

Red Pesto Ravioli

Red Pesto Ravioli

*To oven-roast cherry tomatoes: Heat oven to 350F degrees. Cut each tomato in half and arrange in a large oven-proof baking dish. Mix together a big splash of olive oil, a spoonful of brown sugar, and a few pinches of salt. Pour this over the tomatoes. Gently toss them a bit, making sure they all get coated. Arrange tomatoes cut-side up. Place in the oven and bake for 45 mintutes or so, until the tomatoes are shrunken and sweet. [I posted this recipe.]

Cherry Tomato Couscous

Cherry Tomato Couscous

Lori notes - this really needs a generous amount of salt, and the lemon and lime juices might need to be adjusted depending on how juicy the fruit is. [I posted this recipe.]

The polenta will still be soft after cooking but will firm up if allowed to stand for a few minutes before serving. [I posted this recipe.]

Salmon and Summer Squash In Parchment

Salmon and Summer Squash In Parchment

Baking fish wrapped in special grease- and moisture-resistant paper ("en papillote" in French) allows it to steam in its own juices, locking in aroma and flavor. For even cooking, choose fillets of uniform thickness. [I posted this recipe.]

John Mccain's Rib Recipe

John Mccain's Rib Recipe

I've never made ribs in the crockpot with a dry rub before. I was nervous that they'd get awfully tough and burn. I couldn't have been farther from the truth. The meat was flavorful, tender, and juicy. The lemon gave a neat tartness I've never had with ribs before. The kids ate the meat, and there were happy noises at the table. They've asked me to make this again. [I posted this recipe.]

Gnocchi with Sausage and Spinach

Gnocchi are small, quick-cooking dumplings, usually made from potatoes. You'll find them with the fresh or dried pasta in supermarkets, or you can substitute a short pasta, such as penne. [I posted this recipe.]

Crockpot Mashed Potatoes with Cream Cheese and Sour Cream

Crockpot Mashed Potatoes with Cream Cheese and Sour Cream

So very good. My kids seemed to have thought that these were spicy (makes no sense whatsoever) and weren't thrilled with the bits of skin I left on. I like a bit of skin, and so does Adam, but apparently the kids find it highly offensive. I gave a quart to our friends, and they loved them. I will make these for Thanksgiving.
