What's for dinner?
I manage the Information Technology department for a healthcare group in Houston, Texas.
When not working, I like to read, snow-ski, golf, research family history, travel, tinker and build in my garage workshop, photograph the times of our lives, and, of course, cook & eat -- so much to see and do, and so little time!
When time permits, my wife and I like surprising our friends and family with new tastes and variations on the old stand-bys.
Recipes I've Posted (all 6)
I have to say that I really like all foods, from down-home cooking to sushi, from pub grub to French to Thai, from simple soups to decadent desserts. That being said, I'm the chief cook for a BBQ Cookoff team and enjoy Chili and Gumbo cookoffs as well -- obviously I'm partial to BBQ, Southwestern, and Cajun fare. I love the flavor that chiles add to foods, so anything complex and spicy is wonderful.

Jim's Blue Cheese BurgersKetjap (or Kecap) Manis is an Indonesian sweet soy sauce. It has a much less salty taste than either regular or "lite" soy sauce. You can find it in stores that sell ethnic foods (such as Fiesta or Whole Food Market in Texas) or order it online. DO NOT substitute regular soy sauce. There are recipes you can find online for Ketjap Manis, or for a rough substitute, mix one part lite soy sauce with one part dark molasses. [I posted this recipe.]

Jim's Cajun FirecrackersI specify the unsalted or lightly-salted top crackers because the regular saltines make these way too salty and much less appetizing for most people. [I posted this recipe.]
