Cajun Country Shrimp Boil

I toss the carrots in at the same time as the potatoes - otherwise they're a little crunchy. I also add the onions early for flavor too. The ingredients seemed kind of approximate - esp. the spices. I doubled all of the spice's amounts and still could have used more. I think the size of the pot and the amount of water makes a huge difference. The original recipe (Chef Rick) says add the amount of shrimp (in the recipe) per person, so that's what I did. Both times I cooked this recipe, people raved and KEPT EATING! It's really good. Roasted Potatoes with Garlic and Rosemary

Nice and crispy on the outside...fluffy on the inside. Boiling the potatoes for a minute before roasting seems to make a difference. I served this with Parmesan Crusted Chicken and Green Beans Almondine. — Sherri 1/4/2007
