I cook mostly for two.  Dinner parties make me nervous... I like simple and healthy recipes, not too time consuming, variety with nice presentation. I am originally from Belgium, emigrated to Toronto, Canada and worked my way West over time.  I am now retired and live in White Rock, BC.  I am impressed with Big-Oven recipes software, I Paint Shop Pro a little and this helps with the photos and presentation aspect. I placed the rinced sole filets over previously cooked creamed spinach. Cover with bread crumbs mixed with parmesan cheese and baked for 20 min. I find that sole falls appart when poached and skipped the bechamel for an lighter version. 6/6/2008
