Chocolate Eclair CakeThis was my contribution to Xmas dinner dessert table & it was a huge hit!! I used whipped heavy cream in lieu of Cool Whip, then topped with raspberries, toasted sliced almonds & drizzled chocolate syrup. Beautiful Presentation. Will definitely make again. ??

Lemon Garlic Chicken ThighsI made a few adjustments & got a great result. For a brighter lemon flavor I added the zest if 1 lemon, Ponzu in place of soy sauce, grated in about a tsp. of fresh ginger & 1 clove minced garlic. Done in less than 45 min.

Chewy Sugar CookiesEASY, EASY, EASY!!! Whenever I'm in need of a little kitchen therapy I bake. I used lemon extract instead of vanilla & added zest of 1 lemon. Sprinkled w/turbinado sugar. Will definitely make again.

Chewy Oatmeal Raisin CookiesI made these over the weekend & they came together very quickly. I refrigerated the prepared dough for about an hour & the edges were crispy w/the center chewy. I think my husband got a one every time he passes the cookie jar.

Buffalo Chicken Cheese BallsEasy & delish. These were a big hit & went fast. I just used Marie's bleu cheese dressing/dip & doctored it up to save on prep time. Worked great.

Oven-Fried Potatoes and Sweet PotatoesI only had sweet potatoes but I took other reviewer's advice and added more seasoning (cumin & ground chipotle to taste). Yummy!! We like spicy.
