I live in The Central Valley in California. I know this is total suburbia but such a great place to raise a family.  I take care of my 3 children full time. I proudly refer to them as Great People! I enjoy cooking and baking where I get alot of help from my little chefs. When I'm not in the kitchen you can find me relaxing with a good book or crafting something useful! Wanna know more? Bryan's Mexican Casserole

I found this recipe in the "Use Up Leftovers" section, searching for beans and rice. I always boil pinto beans and make spanish rice. I followed the recipe using these substitutions in place of the minute rice and canned ranch beans. It fed my family of 5 very well with leftovers. My family enjoyed this meal with Tostadas. Very tasty meal! My picky eaters enjoyed it enough to eat around the tomatoes. I will totally make this again and maybe add some ground cumin and some california chili powder. This recipe is warm and filling as well as quick and easy, all the while serving the purpose of using up my leftovers. — Beachbumette 7/1/2011

Hi I'm on a weight loss journey. I've been incorporating more fruits and veggies into mine and my family's diet. I've found it difficult to do this cause my kiddos don't like many veggies. I'm also looking for low fat and low calorie solutions on how to prepare skinless boneless chicken over and over again.....Can you help?
