I am a busy stay at home mom of triplets (2 boys - 1 girl) and I love, love, love to cook!!!  I also love to entertain, have little get-to-gethers and parties; we have a lot of family and friends who visit a lot because of the triplets.  So I am always cooking for a crowd!!

Someone stated these are only 13 calories a muffin??? I have computed over and over and I am getting roughly 130 to 170 calories?? Can someone clear this calorie confusion up for me Please and Thank You! :)

These turned out amazing!! I only used 1/2 c. Of mini chocolate chips and the chocolate flavor was perfect! No need for frosting, and my three year olds loved them!!

Black Bean/sweet Potato Quesadillas

Black Bean/sweet Potato Quesadillas

This was super quick and the kids and I enjoyed them!! I mashed the sweet potatoes with some cinnamon & sugar and then a bit of spicy seasoned salt. Then used red beans in chili sauce, drained well. Topped with shred cheese and it was a sweet and spicy delicious combo that I felt good about serving my kids!! Thank you for the great idea!!

Pumpkin Banana Nut Bread

Jus made this and the house smells amazing and my three 3 year olds were attacking me to try it!! We ate 1/2 of one loaf already and it's only been out of the love ten minutes!! I had to do a little substituting because of what I had on hand but it was amazing, moist, and fluffy!! Wonderful recipe; I will be making this regularly!! (I used 3 c. Flour 1c. Baby cereal, 1&1/2 c. White sugar no brown, 1/2c. Applesauce, only 1/4 c. Oil and 5 teaspoons pumpkin pis spice.)

This is super quick and simple, tastes amazing, and my three 3 year olds can't get enough of it!! I add a little Mrs dash herb blend to it sometimes or a spicy Cajun season blend too and it is just fantastic!! Must try for sure!

I just made this yesterday & it is outrageously good!! We used honey crisp apple slices, animal crackers, & toasted eggo waffles cut wedges and we couldn't stop eating it!! I make it using the whole box of cake mix, about 2 cups vanilla yogurt, & 1&1/2 cups cool whipped topping! This sooooo yummy, easy, & just plain fun!!

Simple Hamburger Casserole

Simple Hamburger Casserole

Just made this again last night & used frozen meatballs that i cooked in a 9x13 baking dish for 15 min @ 350. Then dumped in 3 big handfuls of fresh green beans & zucchini, chopped. I then poured the sauce over & topped with the tots. Baked @ 400 for 30 min or so & topped with cheese & served! It was excellent & all ingredients were 2 year old approved!! I love that you can sub in what is on hand, so easy to prepare, only takes a few minutes & it's in the oven!!

Just made this with fresh zuchini the triplets & i picked this morning from our garden!! It was FANTASTIC!!! So moist, light, & fluffy like a cake with a devilish brownie flavor! The kids were begging to go pick more "zoo-keys" as they call them! This recipe will be the only chocolate cake i make from now on! & Grandma can enjoy it with us too cause she's allergic to eggs! AMAZING!!

I prefer the oven method just because it's a bit quicker & I always seem to have the oven going anyways! But the person I originally got the recipe from usually makes them in a crockpot and there's really not much difference... kind of just depends on what u have time for really! Hope this helps!

I just made this about 2 hours ago and it is fantastic!! My little ones helped make it & loved the taste testing part! It was very moist & had a good balance of peanut butter to banana flavor. I made it exactly as directed except I used only 1 1/2 c. flour & then 1/2 c. baby cereal because I have a ton left over & need to get rid of it!! Fantastic recipe, we will be making this quite often, Thanks!!

I have made this several times now and it is always a HUGE hit!! Just like my mom used to make when I was growing up!! The first 2 times I made it my husband refused to try it saying "I hate squash!!" But after watching the Trips each devour half a squash on their own and cry cause there wasn't any more left; he decided to try it the next time. He was amazed at how awesome it tasted and now begs me to make it all the time!!

I just made ths for supper and my family really enjoyed it!! I added garlic to my water (1 1/2 c.) while the carrots cooked. Once the water evaporated I added the remaining ingredients plus some parsley. It was just the right amount of sweetness & was super easy to prepare!! My husband told me I can make carrots like that all the time & the triplets couldn't get enough of them!! Thanks!!

My whole family loves this pasta salad!!! It is so quick & easy to throw together, it's colorful and bright, fresh, healthy and light, yet satisfying and filling! It is a fabulous summertime meal you can pack and take on a road trip, to a potluck, all sorts of parties, or send for lunches!! Try crumbling some crushed nacho chips on top or a handful of cheese is great too!

This was a hit at my house!! My husband couldn't stop eating it and neither could my little ones!! I was able to set a bowl full aside for my self and the rest was history!! I added some cubed, seasoned, grilled chicken, black olives, green onions, and green peppers to the mix because I had them and needed to use them up. Thanks for the super quick, "no cook" summertime meal idea!

I am so glad you enjoyed the potatoes....I now always use parchment paper when making roast potatoes.I must admit I don't make potatoes any other way:)...so glad I could be of help.
I know I used to have some of my potatoes stick as well. Thrilled when I found out that parchment paper works so wonderfully...giving you every bit of the potato:).

Just wanted to let you know a tip on the fingerling potatoes ...use parchment paper on the cookie sheet. It eliminates stuck potatoes:) Hope you like them.
