Here are the best possible fried eggs. This method is adapted from the ultra-meticulous French chef Fernand Point (1897-1955). The Point approach involves gently, slowly cooking the egg to retain its delicate purity, a careful technique that is somewhere between frying and poaching in hot butter. The technique makes one spectacular egg and demonstrates that simplicity and purity often yield the best dishes of all...
asteroide ,I have not tried this recipe... If you like the yolk inside of the egg whites instead of on top, just press the eggs down as soon as you put them in the pan. (My mom makes them like that. :) )6y
sullivanranchmaine ,The only thing I add to this is toast to slide the eggs on to... And forking the yolk until it oozes in to the toast. I have 6 goose eggs, I'll be trying this soon!9y
jaxlin19 ,Wow. First of all I find it a tiny bit embarrassing for just learning how to fry an egg. It might sound like a ridiculous recipe (it did to me) but I'm so glad I tried it. I've always dribbled the butter on the top, flip the eggs over and 50/50 shot of ruining it.... This method is simple, the eggs were nice without fried edges or spots. Even the presentation was awesome! Thanks once again sgrishka9y
clintes1 ,I can never fry eggs that have a hardened yolk until I followed this recipe. This is so simple! Reminds me of how my mom used to make them fresh from the chicken coop9y
mkaoi ,Grew up eating the eggs like this, this method as been used in my family for at least 50 years. Can also add a dash of pure olive oil to the butter.9y
dark-molecule ,Amazing recipe, I made it this morning for breakfast it was easy to make and tasty I'd recommend it :).10y
kwond ,Excellent recipe! I tried 2 eggs, they were so good I had to have a third! Just like at one of my favorite restaurants I go to time to time. I had my eggs over easy my wife likes hers firm. She told to watch the edges otherwise she likes them. Thank you so much!11y
alyssamahina ,I've always made eggs for myself and my son, but I have never been able to get the perfect runny yolk. This is. A great method.11y
mogriff1 ,I broke my yolk (I do not like runny yolks) and cooked about a minute longer. This method will be the way I do fried eggs going forward. There were no hard edges and it evenly cooked with a great soft texture inspite of cooking it a little longer. The low temperature ( and not flipping, which I usually do) is the key. Perfect!11y
brandiwilliamsonwing ,My favorite way to make eggs! My family calls them "Dippy Eggs", instead of Sunny Side Up, because the yolk is so runny you can dip your toast in it... This tecnique keeps the whites very tender & delicate, not crispy at all, so they are very easy to mash up. YUM!!11y
