Suggest a better descriptionChop tofu into small cubes
Lay on paper towel to dry.
Place another paper towel on top and weight down with baking pan to dry.
Heat vegetable oil in a deep sauce pan.
Coat all sides of tofu cubes with corn starch.
Test oil heat with a chopstick or small piece of tofu.
Fry tofu cubes in oil for a few minutes until they float and are golden brown
Place fried cubes on paper towel to absorb extra oil
Continue frying until finished
In a small saucepan, combine dashi powder, water, mirin, soy sauce, sugar, & salt
Bring to a small boil to burn off alcohol in mirin
Pour dashi in a bowl and garnish with chopped scallions and seaweed seasoning (furikaki)
Put tofu bites in the dashi to absorb flavor while eating.
I prefer to put small amounts of tofu in dashi while eating to keep some of the crunch from the fry.
