Suggest a better description1. Heat oil in a skillet over medium-high heat. Add boy choy; cook, stirring often, until wilted, 6-8 minutes. Add ginger and garlic; cook, stirring constantly, 1 minute. Transfer boy choy mixture to a bowl; let cool 5 minutes. Pat dry it h a paper towel. Stir in pork and red pepper.
2. Preheat an air fryer to 375 degrees Fahrenheit. Lightly coat fryer basket with cooking spray.
3. Put a wonton wrapper on a work surface and spoon about 1 Tbsp filling in the center. Lightly moisten edges with water. Fold corners up over center, pinching edges to seal. Repeat with remaining wrappers and filling.
4. Arrange 6 dumplings in prepared fryer basket (do not crowd); lightly spray with cooking spray. Cook, turning over halfway through, until lightly browned, 12 minutes. Repeat with remaining dumplings.
5. Meanwhile, stir together rice vinegar, soy sauce, sesame oil, brown sugar, and green onion in a small bowl until sugar is dissolved. Serve with dumplings.
