Suggest a better descriptionIn electrix mixer, combine flour, sugar and salt in large bowl.
Add butter, tossing it with flour mixture
On low speed, blend butter into flour until it looks like a coarse, damp meal.
Turning mixer off and on, add half of water. Mix briefly on low speed.
Add remaining water, mixing slowly until dough starts to form large clumps. Stop often to stir up bottom of mixer.
Test dough by sqeezing some between fingers. If dry and not packable, drizzle 1 tsp more cold water over dough and work in with fingers.
Pack dough into a ball as if making a snowball. Knead ball 1 or 2 times, then flatten into 3/4 inch thick disk on a floured surface. Wrap in plastic and refigerate 1hr to overnight before rolling.
For double crust, make 2 balls with one slightly larger for bottom crust. Use 2 3/4 flour, 1 Tbsp sugar, 1 tsp salt, 1 c butter and 1/2 c water.
