Ingredients:
2 cups almond flour
1 1/2 cups sugar
8 egg whites
7 egg yolks
1/4 cup slivered almonds for decorating
Powdered/confectioners sugar for dusting the finished cake
Instructions:
1. Pre heat oven on Bake at 350 F.
2. Line the bottom of loaf pan or 10x10 cake pan with parchment paper, I like to also slightly coat the pan with butter or margarine. A 10” round will also work.
3. Toast the slivered almonds for 3-5 minutes then set aside.
4. Separate the egg whites and yolks into separate bowls and with an electric mixer, beat the whites till they form still peaks.
5. In a large bowl, mix the almond flour, (7) egg yolks and sugar into a batter (it will be clumpy).
6. Carefully FOLD in the egg whites till fully combined but do not over stir, this where the cake gets it’s volume.
7. Pour the mixed batter into the prepared baking pan and place it on a cookie sheet or a second baking pan, (this double bottom provides a more even heat and prevents burning).
8. Bake on the middle rack position for 35 to 50 minutes till it is no longer jiggly and a toothpick comes out clean. Depending on your pan depth start checking after 35 min. Mine usually needs at least the 50 minutes till it is not jiggly and yet there is still a slight (intentional) gooey center.
9. After removing the cake, let cool for at least 45 minutes and dust with the powdered sugar and sprinkle on the toasted almond slivers.
