Suggest a better descriptionSoften powder gelatin in 1/2 cup of cold water. It will be lumpy so you'll need to work at it. The best is to add 1/2 cup more water microwave for about a minute. Mix quickly and make sure to scrap the bottom because the gelatin will be accumulated there. IT'S VERY IMPORTANT THAT THIS GELATIN MIX IS TOTALLY MELTED.
In a pot, heat the remaining 2 cups of water, evaporated milk and sugar, and add the 1 cup gelatin mixture from above. Heat pot until it comes to a slight boil. Remove from heat - do not leave on the stove. Mix thoroughly and let it cool. Add almond extract. Pour into 9x13 pan and refrigerate overnight. Chill the large can on fruits.
TIP: any time you put any type of gelatin/jello in a mold or pan, wipe the sides with mayonnaise to grease the container. DO NOT USE PAM OR GREASE.
When ready to make, cut the gelatin into cubes. Put into bowl with fruit cocktail or fruits WITH SYRUP. Mix gently and serve.
