Ingredients:
1.5 cups blanched almond flour
1/4 cup cacao powder
1/4 teaspoon sea salt
1 teaspoon baking powder
6 tablespoons maple syrup or honey, or 1/4 cup coconut /date/ non refined sugar
1/4 cup melted (cooled) coconut oil
1/4 cup water or non dairy milk
2 large eggs
1 tablespoon vanilla
Chocolate chips
Orange zest
Instructions:
Preheat your oven to 325ºF
Prepare a baking pan with muffin liners.
Whisk the almond flour, cacao powder, salt, and baking powder together in a bowl or mixing bowl.
Add the maple syrup, coconut oil, water, eggs, and vanilla, and whisk or mix until well blended.
Fill the cupcake liners until 3/4 full. Add chocolate chips on top or mix through with a toothpick.
Grate orange zest on top.
Bake for 25 minutes, or until a toothpick inserted in the center of a cupcake comes out clean.
Add more zest if you like.
Store sealed at room temperature for several days, or sealed in the refrigerator for 7 days.
