Cherries: drain, remove the stems, and cut in half and rinsed
Pineapple: drain and squeeze out most of the juice
Mandarin Oranges: drain
Grapes: Remove from stems and clean. (recommend smaller vs larger grapes)
Use a large sifter to drain each of the fruits. Fold 2 paper towels together and then in half to wipe the bottom of the sifter to remove excess moisture. Too much moisture will make the final product runny. Place fruit in medium bowl and set a side.
Variation: Replace the cherries, grapes, and pineapple with 3 ½ cups of fruit cocktail
Assembly:
In a large bowl, whisk the sour cream, powdered sugar, and vanilla extract together until well blended.
Variation: Change the extract (try orange, lemon or almond) for a different taste. Add food coloring to match a party theme
Add in the coconut and stir until well coated. Continue the process separately with the fruit and marshmallows.
Cover and refrigerate at least one hour before serving. Stir before serving.
