Tofu 1-2-3
Put the orange, banana, pineapple, and grapes in a medium bowl. Stir and set aside.
Put the pecans and coconut flakes in a dry skillet over medium heat and toast them, stirring constantly, until they become aromatic and the coconut flakes start to turn golden, about 3 minutes. Stir into the fruit and set aside.
In a food processor, combine the tofu, maple syrup, vanilla, salt, and nutmeg and blend until completely smooth. Pour over the fruit mixture and stir to combine. Serve immediately or transfer to a storage container and refrigerate until ready to serve.
