Prepare tomatoes:
Wash and dry tomatoes. Cut a small slice off the bottoms of each tomato so they will stand upright. Using a paring knife, slice off the top of the tomatoes. Using a small melon baller, hollow out the insides of the tomatoes by gently scooping out and discarding the seeds and pulp.
Pipe hummus into tomatoes, place on plate and garnish with basil, saffron strands, and drizzle with EVOO. Place dome over tomato, then lift enough to insert smoke.
