Similar to a sugar cookie, but a bit different with fine coconut and a few other ingredients added to make it a unique taste. A family favorite!
Preheat oven to 350 degrees.
Mix shortening, sugars, and egg together until creamy and smooth. Add in vanilla until blended. In separate bowl mix flour, salt, baking soda, and cream of tartar together. Add flour mixture to sugar mixture in small batches until completely and thoroughly mixed together. Mix in coconut.
Roll dough into small balls. Dip tops of balls in sugar and place on greased cookie sheet. Press lightly flat with bottom of drinking glass.
Bake at 350 degrees for 6-8 minutes.
