Any time casserole
Take the potatoes out of freezer when you start browning the sausage so they get a headstart on defrosting but are still kind of frozen when you're ready for them.
· In a large skillet, brown sausage and onion if you use it (Leave most/all of the grease in the pan with the sausage)
· Add potatoes directly to the sausage (and sausage grease) while in the skillet and stir together until the potatoes are nicely coated in "flavor"
· Mix in 3 cups of cheese into the sausage/potato mixture and pour into your largest casserole (something an inch or two larger than a 9X13)
· Lightly beat 6 eggs and mix well with the milk
· Pour over the cheese/sausage/potato mixture, mix a little so the milk/egg isn't all on top
· Cover with remaining cheese (I frequently need a touch more than 1 cup to cover because we are cheese heads) - you can wait 10 or 15 minutes after you put in the oven to cover with cheese if you're worried about the cheese getting too brown
· Bake at 350 for about an hour
