Mix together the Bisquick, sugar, cinnamon and applesauce. Add remaining ingredients and mix.
Drop into muffin tins.
Bake 12 minutes at 400.
When removed from oven, dip tops of muffins in melted butter and then in cinnamon sugar (1/3 cup sugar plus 1/2 teaspoon cinnamon).
*If you don't have Bisquick, you can make a substitute with
1 cup flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon shortening, olive oil, or melted butter
Combine dry ingredients; whisk ingredients together.
Add the shortening (or olive oil or melted butter); cut into dry ingredients until well mixed.
