Place the nuts in one layer on a baking sheet and bake in preheated 325 deg F oven until brown, about 8 minutes. Let cool.
Cream the butter with orange peel and the sugar until light and fluffy. Beat in the eggs, one at a time, and the vanilla and almond extracts.
Combine the flour, baking powder and salt and add to the butter mixture, combining until thoroughly mixed. Add the dried apricots and almonds and mix until blended.
Divide the dough in half and place on plastic wrap. Shape I to a log as long as the baking sheet then unwrap onto greased baking sheet. Do the same with the other half. Pat down the logs a bit with wet fingers so they're no longer round.
Bake on middle rack at 325F for 20-25 minutes, or until light golden brown. Remove from oven and let cool for 5 minutes. One loaf can be frozen at this point if desired.
When they're cool, place on cutting board and slice with serrated bread knife at 45 deg angle in ~1/2 inch thick slices. They will still be soft, so be careful. Place slices on baking sheet and bake again for about 8 minutes, flip, and bake for about 8 more minutes. Let cool on a rack.
