Quick, easy and healthy
Preheat the oven to 425? F
Rinse the chicken with cold water and pat dry with paper towels. Place in a single layer on a 11" x 17" baking dish.
In a small bowl, mix the preserves, mustard and hot sauce. Spoon over the chicken.
Bake for 15 minutes.
Baste with drippings and bake for another 10-20 minutes or until a meat thermometer in thickest part reads 160? and juices run clear.
Refrigerate 2 pieces for Chicken Waldorf Salad for lunch.
