Suggest a better descriptionTo assemble, divide all ingredients except bacon grease into two separate gallon-sized bags. Lay flat, label and place in
freezer.
Day of cooking, use a large cast iron skillet to heat bacon grease over medium heat. Add scallions, garlic, tomatoes,
cilantro, and a pinch of salt and cook about 4 to 5 minutes, constantly stirring.
Add beef to the pot along with beer, water, cumin, bay leaves, and salt, if needed. Cover and simmer on low heat for
1 ½ hours. Add potatoes and cook until soft, about 20 more minutes.
Each bag makes about 3-4 servings.
I would throw it all in the crock pot.
