An American's take on the Asian-Peruvian dish. This was modified from the first dish I ever learned to cook, as an American child living in Peru.
Cook rice in rice cooker
Chop Brussels Sprouts coarsely
Chop Yellow onions coarsely
Slice Jalapenos thinly
Put veggies in a baking pan, drizzle with olive oil
Bake veggies @ 250 F for 10 minutes, or until slightly browned
Cook sausage in frying pan
5 minutes into cooking the sausage, add the eggs to the pan, break the yolk, and cook for 5 more minutes
In a large pot, mix rice, veggies, and sausage + eggs. Add soy sauce.
Cook for 5 minutes
