Artichoke Tart
Preheat oven to 350
Roll out puff pastry sheet to fit a tart pan or pie plate.
Grease pan with a little OVOO.
Put pastry in pan and hold in fridge
Add OVOO to a sautée pan.
Add leeks and cook for a minute or two.
Add artichokes and cook for a few minutes.
Add wine and cook until wine is evaporated.
Let cool and add to tart pan.
Top with grated cheese.
Add herbs to beaten eggs and pour on top of cheese.
Top with another puff crust.
Brush top crust with EVOO.
Bake at 350 til top is golden brown.
Serve warm
Don't use jarred will oil and vinegar. Frozen works best.
