1/2 cup olive oil
1/2 cup chopped green onions
2 tablespoons chopped parsley
1/2 cup chopped onions
1/2 cup chopped celery
3 cloves garlic
1 cup Italian bread crumbs
1 tomato, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 can Artichoke Hearts + Liquid
1/4 cup grated Parmesan Cheese
DIRECTIONS:
* In Large AuGratin Dish, place olive oil, onions, green onions, celery, parsley and garlic. Mix Well.
* Microwave on Highmore 10 minutes.
* Add bread crumbs, tomato, salt, pepper, and artichokes w/liquid. Mix well.
* Microwave on High for 6 - 7 minutes or until hot.
* Sprinkle Cheese on top.
* Microwave High for 1 1/2 - 2 minutes or until cheese is melted.
* Cooking time: 18 minutes
Yield: 4 - 6 Servings
*** NOTE: This recipe is from when microwaves first came out, so watch food carefully because cooking times may need to be adjusted.
This Recipe comes from an old New Orleans Furniture & Appliance store, I believe the name of the store was "Tony Compass Furniture & Appliances". When microwave ovens first came out and you bought one from them, they offered a Microwave Cooking Class. With it came a book of recipes (which this recipe came) and an 8 cup glass measure.
