Mays seem like an odd combo with onions, vinegar and watermelon- but it really works! The dressing by itself does NOT taste good, but don't worry as it does with the sweetness of the watermelon. Resist the urge to add sugar to the dressing.
Crumble feta, cut watermelon into bite-sized pieces and halve the grape tomatoes.
Whisk oil, vinegar, and salt to blend; set aside.
Place arugula, onions, tomatoes, watermelon and feta to the bowl. Drizzle the dressing and toss lightly.
For quick use in future meals, mix in a bowl just prior to serving.
