lemon grass, white wine, shallots, fish sauce cooked down
saute shallots in small frying pan. Add ginger, white wine and lemon grass & jalapeno. Cook down. Add more wine and then the fish sauce as needed to have enough sauce for your fish. Really nice flavors. Add the celery leaves to sauce right before serving so they stay green and fresh.
